Convert PDF To Text
Practically any PDF viewer has the option to copy and paste text from PDF documents, but barely any provides the means to convert a PDF document to text.
Doing so by selecting all the text of a PDF document and pasting it to a text document might work but it is a cumbersome process, and if the PDF is protected, you may even run into a brick wall trying to do so..
Using software programs specifically designed to convert PDF to text is more efficient, especially since software automates the process and makes it more comfortable in the process.
How to convert PDF documents to Text
Extract PDF To Text is supplied as an executable and source code. Users need an account on the Code Project website to download the file, but the data is not verified during the registration.
The tool opens a file browser upon execution which you need to use to select a PDF document from the local hard drive. The selected PDF file is loaded and then converted to a text document by Extract PDF to Text. The created text file is saved to the same folder as the original PDF file.
Extract PDF To Text cannot convert multiple PDF documents at once which is why Easy PDF to Text Extractor might be a suitable alternative for users who regularly extract multiple text documents to text or have a large amount of text documents that they want to convert to text.

Easy PDF To Text Extractor can be used to add and convert multiple PDF documents at once to text format. It basically does the same thing that Extract PDF To Text does with the exception of batch document processing support and a graphical user interface that it comes with.
The output is not perfect and it does require some manual correction. The text is readable without the procedure but correcting the gaps and words that got torn apart will improve readability.
Closing Words
Both programs provide you with options to extract text content from PDF documents. They do so automatically, and the main difference between the two is that Easy PDF to Text Extractor can do so in batch mode while Extract PDF to Text cannot.
